Pengaruh Substitusi Tepung Ampas Tahu Dan Penambahan Kappa Karagenan Terhadap Waktu Rehidrasi Beras Analog Jagung

Beras analog jagung merupakan salah satu alternatif pangan yang berpotensi mendukung diversifikasi pangan melalui pemanfaatan bahan baku lokal. Waktu rehidrasi merupakan salah satu karakteristik penting yang menunjukkan waktu yang dibutuhkan produk untuk menyerap air hingga siap dikonsumsi. Penelitian ini bertujuan untuk menganalisis pengaruh substitusi tepung ampas tahu dan penambahan kappa karagenan terhadap waktu rehidrasi beras analog jagung. Penelitian menggunakan Rancangan Acak Kelompok (RAK) faktorial 3 × 3 dengan dua faktor, yaitu substitusi tepung ampas tahu dan penambahan kappa karagenan. Data dianalisis menggunakan Two-Way Analysis of Variance (ANOVA) dan dilanjutkan dengan Duncan's Multiple Range Test (DMRT) pada taraf signifikansi 5%. Hasil penelitian menunjukkan bahwa penambahan kappa karagenan dan interaksinya dengan substitusi tepung ampas tahu berpengaruh nyata terhadap waktu rehidrasi, sedangkan substitusi tepung ampas tahu secara tunggal tidak berpengaruh nyata. Waktu rehidrasi tercepat diperoleh pada perlakuan T2K3 sebesar 6,3 menit, sedangkan waktu rehidrasi terlama diperoleh pada perlakuan T1K3 sebesar 11,3 menit. Hasil tersebut menunjukkan bahwa waktu rehidrasi beras analog jagung diperngaruhi oleh interaksi antara tingkat substitusi tepung ampas tahu dan penambahan kappa karagenan
